Wow, I did not realize it had been so long, since I posted to my blog. Needless to say, I have lots to share with you today. First I am hosting the May Theme Challenge at Polka Dot Plum. I had intended, to tell you about my challenge earlier in the month, but my back has been acting up. There is still time to join in the fun though, and I think most everyone has some kind of layout they can make about food, eating at a restaurant, baby’s firsts, birthday cakes, recipes, etc. I used Summer Treats by Sunny Day Scraps, to make this layout, of my mother, visiting my son at work.
I am also excited, to share with you, the layouts I made of our lunch at Mythos Restaurant, in Universal Studios, Orlando. If you are going to eat any where in the park, you should eat at Mythos. You can rest your feet while enjoying the air conditioning and amazingly beautiful cave like atmosphere. It would be easy to spend a lot of money here, but with the right selections, you can also do it for a reasonable price. Comparable to, or even less than, what you would spend elsewhere in the park. They bring rosemary bread and butter to start. My adult daughter and I don’t eat much, we decided to share the Roman Panini with fries, thinking we would have room left over for dessert. However the serving sizes are so large, neither of us was able to finish our half of the meal. She also had a virgin daiquiri and I had a coke. The total for the two of us, including a nice tip, was slightly less than $20. Our server was so-so. but the atmosphere and price more than made up for it.
All of the items used in my Mythos layouts are by Baby Cakes Scraps. The kits I used are Miranda, Sunset Dreams, And Shades of Autumn. Beautiful as my layouts are, they do not show how fantastic each one of these kits is. They are all full of fabulous elements, beautiful colors, and fantastic textures and I look forward to using them again soon.
As a special thank you for stopping by my blog, I made you a couple templates, based on my layouts above. Click here to download, and have a great rest of the day!

I used this week’s Plum Friday Freebie in a layout I made for the March Journey 12 challenge. If you are looking for a little journaling motivation, Polkadotplum has got you covered in 2012! Each month, you will find new layout and journaling inspiration, in the Journey 12 challenge.
For ”All About Me” layouts, check out the Journal Your Journey Challenges. I made the layout below, for the March Journal YOUR Journey challenge.
To further enhance your creative juices, a new kit will be created for each months challenge theme. You don’t have to use these kits to participate in the challenges. However, each kit will coordinate with the kit(s) from previous months. Meaning if you do decide to use the Journey 12 kits, at the end of the year, you will have a completely coordinated, cohesive album!, I used this month’s Journey 12 kit, March (Lucky Me!) by Just Call Me Betty and Queen Pamedalah, to make my layouts and this week’s Plum Friday Freebie,
Hope you will join in the fun at Polkadotplum!

In honor of Saint Patrick’s Day, I am reposting my recipe for Irish Potatoes. I originally made this layout as my ADSR 6.11 entry. Kit is Nick Nack Patty Wack Designed by Today’s Scrap. Template from Twofers Templates: Set 2 by Sweet Tomato Designs. Irish Potato Photo downloaded from net. Fonts are Celticmd and Erin Go Bragh Condensed.
I made a FREE word art of the title on this layout. If you happen to love Irish Potatoes, click here to download.
Irish Potato Candy is a traditional Philadelphia confection, that is not Irish and does not contain any potato. These no-bake, bite-sized candies are super simple to make and all too easy to eat a lot of.
Why are they called Irish Potatoes? They look like potatoes.
According to Philadelphia Irish tradition… they’re the perfect St. Patrick’s Day treat.
Many Families and bakeries have their own variation of this recipe. Our family recipe was first made by my mother. Now, I make them every year for my family.
¼ cup butter softened 4 ounces cream cheese 1 teaspoon vanilla 4 cups confectioners sugar 2 ½ cups coconut flakes Cinnamon
Beat butter and cream cheese until smooth. Add vanilla and confectioners sugar, beat until smooth. Mix in coconut. Roll into balls. Roll balls in cinnamon. chill to set.

I love Cinda’s This City | Mosaic Alpha and Suburban Grunge was the perfect kit to scrap my son’s Parkour photos!
Parkour is a training method that focuses on movement, through natural and urban environments. Parkour is about training the body and mind to react to obstacles with a effective technique. Often that technique cannot be classified. Parkour participants are known as Traceurs. Traceurs train to be able to identify and utilize, more efficient paths as rapidly and effectively as possible, by vaulting, rolling, running, climbing, and jumping with great efficiency.
Many Parkour techniques depend on absorption, the fast redistribution of body weight and use of momentum, to perform seemingly impossible maneuvers. The roll, used to limit impact after a drop and to carry one’s momentum onward, is often stressed as the most important technique to learn. Allowing a Traceur to jump from great heights.
All layouts made with Cinda’s This City | Mosaic Alpha and Suburban Grunge.
